Coarsely blend shallots, garlic, ginger, turmeric, and lemongrass with some water.
Mix chicken pieces with the blended ingredients, salt to taste, fish sauce, sweet soy sauce, and honey until well-combined. Marinate for at least 1 hour.
Next, heat up enough oil to fry the marinated chicken.
Once done, brush the fried chicken with extra honey.
Tips
To prevent the chicken from turning black while frying, don’t use too much honey in the marinade.
Niigata Japanese Anchovy Fish Sauce adds better umami.
